WW Summer Corn, Bacon, and Potato Chowder
1 medium uncooked yukon gold potato(es)
1 spray(s) cooking spray
1/2 cup(s) uncooked celery, chopped (I don't like celery so I skipped this one)
1/4 cup(s) (chopped) uncooked onion(s), chopped (or 1 large shallot)
4 piece(s) corn on the cob, kernels removed with a knife (I just used a can of corn)
1 cup(s) sweet red pepper(s), diced
4 oz uncooked Canadian-style bacon, diced
2 cup(s) fat-free skim milk
1/2 tsp table salt
1/4 tsp black pepper
1/8 tsp hot pepper sauce, or to taste (I used Frank's Red Hot- is that hot pepper sauce?)
Pierce potato in several places with a fork; microwave on high power until tender, turning over once, about 8 minutes. Allow to cool; peel and mash.
Meanwhile, coat a large saucepan with cooking spray. Add celery, onion, corn and red pepper; sauté over medium-high heat for 5 minutes.
Stir bacon and milk into saucepan; stir in mashed potato and mix well. Season with salt, pepper and hot pepper sauce; stir to combine. Cover and simmer 10 minutes (do not allow to boil). Yields about 1 1/2 cups per serving.

Guess I need to work at my food presentation skills. At first bite I wasn't sure about it. So I added some more salt and pepper. By the third or fourth bite I couldn't stop. It suddenly was so good! It only makes 4 servings and I had 2 in one sitting. But since a serving is only about 270 calories that wasn't too much of a splurge for lunch! I definitely recommend this one!

I missed your lack of Pinterest inspired Wednesdays post last week. :-) Hopefully once I can make myself find some time to try some new things, I will be joining you on these posts.
I've also been meaning to ask you since your post about the BodyBugg, did you compare it to any other device before you bought it, like the BodyMedia FIT? What I've read about the BodyMedia FIT, it also measures how well you sleep. Does the BodyBugg do this? Your post really has me thinking about getting the BodyBugg or something similar. I need something to inspire me to get active, and I think actually knowing how many calories I've burned in a day would help.
