That is the pin that inspired me to make this Chicken Taco Chili and I am soooo glad it did! Seriously this is the best thing I have ever made in the crock pot. It made 10 servings and froze some to save for later in the month, but I ended up eating them all that same week I made it. And almost made it again the next week! Best part? 1 serving is only like 200 calories!
Here is my version of the recipe:
Crock-pot Chicken Taco Chili
1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 15-oz can tomato sauce
10 oz package frozen corn kernels
2 14.5-oz cans diced tomatoes w/chilies
1 packet taco seasoning
1 tbsp cumin
1 tbsp chili powder
24 0z. (3) boneless skinless chicken breasts
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in.
I added some low-fat sour cream and cheese to the top and OMG it was so good!

thanks for sharing. You'll have to look on pinterest for homemade taco seasoning. It really saves on the salt.
